Very recently got a second joystick so I'm using the dual stick setup now, loving it. But the throttle is weird (bound to a hat on the T16000M) and I've been considering getting pedals. However I prefer the yaw on my right twist axis, so the two physical pedals is all I really need.
To set them up in elite, you go into options/controls, choose which axis you want to set, then move the control you want to bind it to. Uriel's suggestion is a pretty standard setup for dual stick. There are very few instances where you'd want to use combinations of controls to do anything.

I downloaded and installed the drivers, and the throttle, joystick, and pedals are all working fine in windows (it already feels better than the cheap one I had).
I am using dual monitors on my desktop. My specific question was about setting up the game "Elite: Dangerous" to use both monitors, not just one. I'm rephrasing my original question: how/where can I set up Elite: Dangerous to run on two monitors instead of just one? Thanks.
First is the keyboard mapping mentioned elsewhere. Never tried it, don't have any advice. Second is using Joystick Gremlin to split the device. Third is just accepting the limit, and using a more efficient button mapping. With 32 buttons and 4 POV hats, that's 48 buttons, which is pretty good for Elite's purposes.
5UABFK. All bundles can be set up as heavy (double) control forces with EX1 kit. Max and Metal bundle can be set up as Force Sensing base with EX2 MFSSB kit. (All extension kits will be sold separately)
Iām also not yet using pedals which I may decide to do in the future. No need. Push the throttle all the way forward and flip the unit upside-down. There should be a hole with a screw in it somewhere in the middle, towards the front of the unit. The screw only lines up with the hole when the throttle is all the way forward. Loosen it to reduce the tension.

Go to the manual and look for āConfigure axes responseā and it will explain what you need to know. Play around with it and you will soon start to understand how it works. Do on axis only until you get the hang of it and then add in the rest until you get them where you want them.
